Salads really do not have to be boring! Even pasta salads don’t have to be plain or tasteless, and you don’t have to just cover your salads in a processed dressing that will just take the flavour away from your food!
The best thing about cooking (apart from eating the final masterpiece) is experimenting! I love working out what would go well together in a dish, with most of the time not putting much thought into it, just looking in my fridge/cupboard/freezer to see what I could make.
Here is the recipe for my Mediterranean Style Pasta Salad, with Tuna. Seen on my Instagram a couple of weeks ago. Perfect light summer lunch.
Now with this dish you can literally make as much as you want, or as little as you want. Its completely up to you on the measurements as you can share this with others, keep it cold in your fridge for the next day, or just make a small bowl of it for yourself.
Below I’ve given measurements for one person:
- 60g Pasta
- 1/2 Tin of tuna
- Handful of rocket
- 5 Sun dried tomatoes
- 5 Olives
- Small handful of pine nuts
- Sprinkle of Feta
- Olive oil
- Black pepper
Bring some water to boil in a pan and add the pasta, cook for about 10-15 mins or until its right for you. In this dish I used an organic spinach pasta, but you can use whatever one you like.
Meanwhile, whilst the pasta cooks, chop the sun dried tomatoes and olives in half and put in a bowl. Open a tin of tuna, I prefer to use tuna thats in spring water or the no drain tuna (its less messy!). Put half of the tuna into the bowl with the sun dried tomatoes and olives.
When the pasta is cooked, drain and add into the bowl. Mix with the tuna, tomatoes and olives and then add the rocket. Add a drizzle of olive oil and mix it all together with your hands or a spoon.
To finish, sprinkle the feta and pine nuts on top, add a little black pepper and if you like some more olive oil, just a small drizzle.
Easy, quick, simple, and so tasty!
