I love chocolate orange! Who doesn’t?! These pancakes are a perfect weekend breakfast indulgence, and definitely have that christmassy feel to them, although I’m sure I’ll be making these all year round anyway! I hope you love them as much as I do! The chocolate orange sauce makes them even more amazing! I could literally just sit and eat the sauce on its own.
For the pancake mix:
2 tbsp Raw cacao powder
1 tbsp Milk (I use rice milk)
1/2 tsp Orange zest
30ml Freshly squeezed orange juice
Coconut oil (allow 1/2 tsp per pancake)
For the sauce:
2 tbsp Smooth peanut butter
1 tbsp Maple syrup
1 tbsp Raw cacao powder
60ml Milk (I use rice milk)
1/4 tsp Orange zest
10ml Freshly squeezed orange juice
Put all the ingredients for the sauce into a food processor or blender and mix together until a nice smooth sauce has formed. Pour into a cup or dish and leave aside while you make the pancakes.
Put all the ingredients for the pancake mix (except from the coconut oil) into a food processor or blender; I like to use my Blend Active for this as it is then so much easier for pouring the mix into the pan.
On a medium heat, melt 1/2 tsp of coconut oil in a frying pan. Once melted turn the heat to low and pour some of your pancake mixture directly into the centre of the pan so it forms a circular shape. You can make the pancakes as big or as small as you like but try to aim for 1/2 cm thick.
Cook for approximately 1 minute on each side before transferring the pancake to a plate. Melt another 1/2 tsp to the pan and then pour more pancake mixture in. Continue the process until all the mix has gone.
Stack the pancakes on top of each other and pour over your chocolate orange sauce.
To decorate simply place orange peel on and around the pancakes (pick off before eating, unless you like to eat orange peel! I prefer not to!)
