One of my favourite healthy snacks to make. Perfect for sharing and enjoying with a cup of tea!
Recipe makes approx. 12 flapjacks
Ingredients:
200g oats
1 banana (mashed up)
1 tbsp coconut oil (plus a little extra for greasing)
4 tbsp peanut butter (100% nuts)
2 tbsp maple syrup (100% organic)
1 tbsp honey (use another tbsp of maple syrup to make it vegan)
To top (optional): 2 tsp peanut butter and a small handful of blanched peanuts
Method:
- Preheat oven to 180°c, gas mark 4 and grease a baking tray with a little coconut oil
- Put the banana, coconut oil, peanut butter, maple syrup and honey into a pan on a low heat
- Mix well for a couple of minutes until melted and well combined, not letting it boil
- Turn the heat off and mix in the oats
- Pour the flapjack mixture into the baking tray and flatten out with a spatular, make it as thick or thin as you’d like
- Cook in the oven for around 20-25 minutes
- Take the flapjacks out of the oven and leave to cool before cutting up
- Optional – drizzle some peanut butter on top of the flapjacks and sprinkle chopped blanched peanuts to finish
